Vegan Ice Cream Sandwich & Cookie Recipe


I recently made a successful batch of vegan cookies and thought "how great would these amazing cookies taste with ice cream?!" so that's the story behind the inspiration for this post. Also, I haven't posted anything summer-y yet so I thought a summer dessert staple would be perfect. You could 100% skip my cookie recipe and use store bought cookies, but where's the fun in that?

Vegan Double Chocolate Chocolate-Chip Cookie Recipe
What You'll Need:
1/4 cup vegan butter
3/4 cup vegan sugar
2 tbsp oil
3 tbsp almond milk (unsweetened original)
1 cup whole wheat flour
1/3 cup cocoa powder
1/4 tsp salt
1/2 tsp baking soda
A whole lot of (vegan) chocolate chips

What You'll Need To Do:
Preheat oven to 400°F (200°C)
Cream together the butter, sugar, oil, and almond milk until all lumps are gone.
In a separate bowl, mix together the flour, cocoa powder, salt, and baking soda. 
Combine the butter mixture with the dry ingredients and mix until blended.
Add in as many chocolate chips as your heart desires.
Make 8 balls
Flatten the balls slightly when on the pan or in your hand by pressing with spoon or with your hand (this makes the cookies wider and less fat)
Bake for 10 minutes
If you're using this recipe, make sure the cookies are completely cool before you start putting together the ice cream sandwiches. The ice cream will melt if the cookies are still hot and it will just be messy and not fun and nobody wants that because this is a fun recipe.
 
 
 
Ice Cream Sandwich Recipe
What You'll Need:
8 large cookies
1 pint vegan ice cream

What You'll Need To Do:
Turn the carton of ice cream on it's side and cut four equal slices right through the carton.
Make sure the ice cream has been in the freezer for a few hours. The more solid it is, the better it works.
Remove the packaging from the ice cream slices.
Turn four of your cookies bottom side up and place the ice cream slices on top.
Top the ice cream with the rest of the cookies, bottom side down.

 

That process can be kind of messy and a little difficult, so if you prefer, just scoop some ice cream and sandwich it between two cookies. Not as cool, but it gets the job done. I was able to make a sandwich with a quart container of vanilla ice cream by scooping it directly onto the cookies. This process would work if you're using soft ice cream as well.
