Vegan Meal Ideas

Finding a solid vegan meal plan was always difficult for me. I'm someone who likes hearty, filling meals and I honestly never liked veggie filled salad-y type meals. I always joked when I first stopped eating meat that I was a vegetarian who hated vegetables. But now that my pallet has expanded and I've seen the wondrous beauties of lots of different vegetables, I am now starting to get excited about trying new healthy, veggie filled meals. I still don't like salad though.

All the below meals are meals that I'd typically eat throughout the day. I take dietary supplements to ensure a healthy balance of vitamins in my diet which is why some meals may have more protein or vitamins than others. Now that that's out of the way, let's continue on with the meals.

Typical Breakfast Meals:

I usually have toast in the morning. I've been using this Oatnut Whole Grain bread from Arnold recently and it's the best bread I've ever had. It has really good ingredients which is surprising because most breads are filled with all kinds of preservatives and other unnecessarily bad ingredients.
To top the toast, I usually add either peanut butter w/ sunflower seeds or (vegan) butter or avocados. Whatever I'm feeling that day.

I recently started eating cold oatmeal and it is seriously amazing. I fill a bowl with about a half cup of oats and pour in some almond milk, completely covering the oats. I cover the bowl and leave it in the refrigerator over night and in the morning it's literally waiting for me in the fridge. I usually add a banana or any other fruits I have in stock and recently, I've been adding a tiny bit of agave nectar which is my new favorite sweetener.

Whether it's fruit on it's own or blended up in a smoothie, I LOVE having some sort of fruit for breakfast.

Typical Lunch Meals:

Peanut Butter Sandwich
Even if I had a PB sandwich for breakfast that day, I usually always have a peanut butter sandwich for lunch. It's a good source of protein, especially if the peanut butter is all natural.

Cucumber and Tomato Salad
This is such an easy little meal, I get hungry and excited just thinking about it. I cut up about half a cucumber and half a big tomato, or a few small tomatoes, and dress them with olive oil and red wine vinegar. This is a recipe my mom always makes as a side and it's one of my favorites.

Typical Dinner Meal:

Veggie Pasta
I tend to have a wide variety of dinners, but one of my favorite easy dinners is veggie pasta. You literally gather all the vegetables in your fridge and cook them over olive oil or bake them. Mushrooms, asparagus, tomatoes, onions, zucchini, really any vegetable will work. I then add it to some pasta. I usually add some chick peas or black beans and then that's it. Super quick and easy.

Snacks Throughout the Day

Cashews are my favorite nuts and I tend to snack on them whenever I feel peckish.

Brussel Sprouts
This may be very weird, but I LOVE snacking on cooked brussel sprouts. I really don't know why.

I don't just like fruit for breakfast. I like fruit all the time. Bananas and nectarines are at the top of my most eaten fruits at the moment.

Tortilla Chips w/ Salsa or Guacamole
Chips and salsa is a go-to snack for me. I recently found healthy tortilla chips with little salt added which gives me absolutely no reason to NOT eat this as a snack. I also recently found peach and mango salsa and I've been obsessed with it.


Dairy Free Ice Cream
I'm really not much of a dessert person, but for some odd reason, I always find either a So Delicious or Tofutti ice cream in my freezer and I just have to eat it because it's there. I have to.

And that's all! I didn't realize how much I actually ate throughout the day until I typed that all up.
